Those are definitely on my list, but I've also had requests for a velocipaptor, vicuña, vole, and vampire bat. The only other request I've had for Y is Yokohama chicken - so that will pretty definitely be a yak (though I do think it would be a fun quilt to make all kinds of fancy chickens).

That's one possibility - but I've also had requests for a jaguar, a jackalope, a javalina, a jerboa, and a jewel beetle. :-)
